Baked Albacore Puff
Four servings

1 six-ounce can of troll-caught albacore, drained
1 cup milk
¼ cup butter
¼ teaspoon salt
Dash of pepper
1 cup flour
3 large eggs, beaten
cup grated Swiss cheese
1 tbsp. heavy cream

In a medium saucepan, combine milk, butter, salt and pepper; heat to the boiling point. Remove from heat and immediately add the flour all at once, beat with a wooden spoon until the mixture clings together and leaves the side of the pan. Work in the three beaten eggs one at a time, mixing well. Stir in the albacore and half the Swiss cheese. Spread this batter in a greased 9 inch pie plate, sprinkle with the remaining cheese and bake on the middle level of a 325 degree oven for about 45 minutes until puffed. Turn up the heat to 450 degrees and bake for another three to five minutes until golden brown on top.
