Deep Fat Fried Fingers of Albacore

Troll-caught albacore tuna loins
3/4 cup flour
1/4 cup cornstarch
½ teaspoon baking powder
1/4 teaspoon soda
3/4 cup ice water
1 egg

Shift together the flour, cornstarch, baking powder and soda. Stir in water and egg and beat until smooth. Cut fresh troll-caught albacore loins into strips about 3" long and ½" thick. Heat oil in a deep fat fryer to 370 . Dip the albacore into the batter and deep fry until golden brown. Remove and drain; serve with tartar, cocktail or cucumber sauce, garnish with wedges of lemon.
