Albacore
Pasta with Red Pepper Sauce
Six servings
1 six-ounce can of
troll-caught albacore, drained
8 ounces roasted red bell peppers, chopped
1/4 cup chopped parsley
1/4 cup olive oil
2 teaspoons capers
2 teaspoons minced garlic
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 pound seashell pasta
Cook the pasta in a large pot of boiling salted water until al dente.
In large serving bowl, combine roasted red peppers, albacore, parsley,
olive oil, capers, garlic, and salt and pepper. Drain pasta and immediately
toss with the albacore mixture.
STRAIGHT
FROM THE PANTRY CONVERSION: replace the fresh bell peppers with a
small jar of roasted bell peppers (one example is Mezzetta brand shown
at the right, which is readily available in most Italian delicatessens
and the gourmet foods sections of supermarkets); use minced garlic from
a jar (or even powdered garlic) in place of garlic cloves; and add dried
parsley instead of the fresh parsley.
