Nicoise Albacore Sandwich - Pan Bagnat
Two sandwiches

2 six-ounce cans troll-caught in olive oil, do not drain
1/4 white onion, thinly sliced
1/8 small red onion, thinly sliced
2 tablespoons extra-virgin olive oil, plus additional for drizzling
1 tablespoon red-wine vinegar
1/4 teaspoon salt
Black pepper
Lemon juice
2 plain Kaiser rolls
Lettuce leaves
8 plum tomato slices
2 hard boiled eggs, sliced
4 anchovy fillets, drained
Nicoise olives, pitted and chopped
Chopped scallions
Sliced radishes

Combine the red and white onion with the extra-virgin olive oil, red-wine vinegar, the salt, and several grinds of black pepper in a bowl. Mix and squeeze everything together for 5 minutes with your hands – and don't rush, since the onions need time to release their juices and mellow. Work in the undrained cans of albacore in olive oil; season with fresh lemon juice, red-wine vinegar, and salt and pepper to taste.

Cut Kaiser rolls in half crosswise and spread each bottom half with lettuce leaves. Layer on tomato slices, then add about half the tuna mixture and three or four slices of hard-boiled egg.

Crisscross each sandwich with drained anchovy fillets and sprinkle with pitted Nicoise olives, chopped scallion greens, and sliced radishes. If desired, drizzle more olive oil over the top before and firmly press the Kaiser roll tops into place. Put on a bib and eat!
